Elderberry BBQ Sauce

This barbecue sauce has countless uses but can be substituted for any store bought BBQ sauce. Use it for roasts, smothering on poultry, or baked fish (or simply keeping it in the fridge for dressing up all of your favorite dishes).

Elderberry BBQ Sauce

Ingredients
  

  • 1 can tomato sauce 15 oz
  • 3/4 cup maple vinegar substitute apple cider vinegar
  • 1/2 cup maple syrup
  • 1 cup elderberry juice*
  • 1 tsp paprika
  • 2 tsp chili powder
  • 1 1/2 tsp onion powder
  • 2 Tbsp. masa more if you want thicker sauce

Instructions
 

  • To make elderberry juice from dried elderberries, simmer 1 cup of dried berries with 2 cups of water on low heat on the stove for 30 minutes, then blend in blender. Strain out all debris through cheesecloth.
  • On low heat, mix together all ingredients and simmer for 10 minutes. Add more masa if you want a thicker sauce.
  • Use immediately or store in glass jar in the refrigerator for up to 2 weeks.

    1. Hi Penney,
      Masa is sometimes called corn flour. It’s used to make tortillas and is often available in stores. It acts as the thickening agent in the sauce. You could use cornstarch, potato starch, arrowroot flour, tapioca flour, rice flour, or wheat flour as an alternative, though add it slowly until you get the desired consistency. Some flours are more absorbent than others.
