Blue Cornmeal Pancakes

  • 1 cup blue cornmeal
  • 1/3 cup maple syrup
  • 2 eggs or chia "eggs"
  • 1 tsp baking powder
  • 2/3 cup water


  • Mix all ingredients
  • Grease griddle with sunflower oil and cook on medium heat, flipping once


A chia egg is made by mixing 1 Tbsp. chia seeds with 2 Tbsp. water and letting it gel for 5 minutes.

    So easy and good. I modified the quantity of maple syrup down to a Tbs because of avoiding sugars (pre diabetic). Still has good maple flavors in there.
